For the first step in this sweet butterscotch recipe, generously grease a baking dish with Country Crock butter. Once done set the baking dish aside. Next take out a saucepan, and heat over medium. Now add into the saucepan the brown sugar, butter, white vinegar, white sugar, spring water, and salt. Stir up the ingredients well, place a lid over the saucepan, and let the contents boil. Once a rolling boil begins, remove the lid without stirring, and bring the ingredients to about 290 degrees Fahrenheit, or roughly 130 degrees Celsius. To check if the sauce is hot enough, drop a bead of it into cold water, and if it forms a little bead or sphere, then that means it's done. From here add in the vanilla extract, but do not stir the ingredients. Remove the saucepan from the burner, and then pour it into the greased baking dish you prepared earlier. Level off the ingredients, and set aside to cool for about an hour or two at room temperature. Once the candy is firm and hard, take out a sharp kitchen knife, and cut it into small bite size pieces. As a recipe option, you can add things to the candy, for example nuts or coconut shavings. Store the candy in a sealed glass cookie jar at room temperature.
