Cooking Directions:
To prepare this chocolate covered peanuts recipe, you will first need to take out a double boiler. I personally use a Metro Stainless Steel Double Boiler, and it's work perfectly for recipes like this. Next add the spring water, corn syrup, and chocolate chips to the double boiler. You will want to place these tasty ingredients over hot water, stirring often until the chocolate chips have completely melted. Once that step is finished, remove the contents from the heat, and stir in the salted Virginia peanuts. Vigorously stir until the peanuts are completely coated in the chocolate. Next you will need to take out a large baking sheet, and lay on top of it wax paper to receive the incoming chocolate. Using a teaspoon, take out small clumps of the chocolaty peanut mixture, and place it on the wax paper. Repeat this step until all of the mixture is neatly arranged on the wax paper, do make sure each clump isn't touching other chocolate peanut clumps, as you do not want them to stick together. Finally cover the chocolate with aluminum foil, and place the baking sheet into the refrigerator for several hours, giving the chocolate peanuts time to harden. Store in a glass candy or cookie jar at room temperature. Serve with a tall glass of Edensoy Original Organic Soymilk.
