The first step in this fascinating recipe, is to take out a large baking pan, and line it with wax paper or aluminum foil. Grease this lining with a tablespoon of margarine, and then put it off to the side. Next take out a large saucepan, add in the pure cane sugar and golden syrup. Bring these ingredients to a boil over medium high heat, stirring often. Once it begins to boil, cover the saucepan with a lid, and let it cook for roughly two to three minutes, so that all of the sugar properly dissolves. Next remove the lid from the saucepan, and continue to let it cook, only this time without stirring it. Your goal is to have the sugar syrup reach a temperature of 300 degrees Fahrenheit, or roughly 80 degrees Celsius. Once that heat level is attained, remove the saucepan from the burner, and then stir in the peppermint extract, vanilla extract, and green candy coloring. Stir these ingredients into the syrup, and then pour the syrup into your greased baking pan, and let it cool for a couple of hours on the kitchen counter. If you would like to speed up the process, you can add the baking pan to the refrigerator. Once the candy is hardened, break it into bite size pieces, and then store it away in a glass cookie jar. The peppermint candy will keep at room temperature for about 3 months, and is a perfect treat to serve around the holidays.
