Cooking Directions:
This is an excellent recipe that my grandmother used to make, thought I would share it here online for all to enjoy. For the first step, take out a double boiler. I just bought a new Denmark 2 Quart Stainless Steel Double Boiler, and it works excellent for this recipe. You will want to add your chopped chocolate squares into the top of your double boiler, stirring often until the chocolate is completely melted and creamy. Next take out a large mixing bowl, and add into it the mashed potatoes, vanilla extract, and salt. Sprinkle the powdered sugar over the potatoes, stirring it in gradually by about one cup at a time. Stir up this mixture for a while until it begins to thicken. Once you have a stiff dough like consistency, knead the dough well. After the kneading is complete, take a wet cloth and chill the dough until it's thick enough that you can ball up a small chunk of it. From here start forming half inch balls of dough, and then dip them into the chocolate sauce upon completion, and finally roll them in the coconut. There are numerous different things you can roll these in upon finishing, such as assorted candies like plain M&M's, crush peanuts, sprinkles, sliced almonds, etc. Once you are done, store the potato candy in a cookie jar at room temperature. Serve these with a tall cold glass of milk, or some hot chocolate with a cinnamon stick.
