This is probably one of the easiest candy recipes you will come by. To begin, first take out a large saucepan, add in the two cups of maple syrup, and bring to a boil over medium high heat. You will need to stir often to prevent any chance of burning the syrup. Your goal here is to boil the maple syrup until it hits the 235 degrees Fahrenheit marker, or roughly 110 degrees Celsius. Use a candy thermometer to gauge the heat. Once you have attained this, remove the saucepan from the burner, and let the contents cool to 175 degrees Fahrenheit, or 80 degrees Celsius. During this cooling stage, you don't need to stir the hot syrup. This whole cooling procedure should take about 10 minutes. Once cooled, take out a wooden spoon and vigorously stir the syrup for roughly five minutes, after which you will notice the syrup color will start to lighten a bit, and it will also become thick and creamy. Next pour in the chopped walnuts, and continue stirring for about a minute or so. Finally take out some candy molds, and pour the syrup into these molds, and then set them aside to cool down. Once they are firm within the molds, remove them, and place them into a glass candy jar, and store them at room temperature.
